Corn Meal Muffins – Moist & Delicious
1 ¼ cups corn meal 1 cup all purpose flour
1/3 cup granulated sugar 1 tbsp baking powder
¾ tsp salt 2 eggs
1 ½ cups sour cream (regular or low fat)
¾ cup butter, melted and cooled
Preheat oven to 400° F (200° C). Lightly butter muffin pan.
Mix corn meal, flour, sugar, baking powder and salt in large bowl. In a separate bowl beat eggs, sour cream and melted butter together. Add to dry ingredients and mix well.
Pour into muffin pan and bake 12 to 18 minutes or until toothpick inserted in centre comes out clean. Allow to cool 10-20 minutes before removing from pan.
